Russian tradition "Silent Hunting". Why mushrooms are treated specially in Russia.
Silent hunting is an old Russian tradition of going into the forest to pick mushrooms. It was called Silent because the “catch” was caught quietly, without noise.
 
Historians conclude that the popularity of eating mushrooms in Russian came initially to the Slavs, after baptism, since the faith assumed 200 days of fasting, and therefore people began to look for new Lenten products to diversify their diet. This fact also confirms that the use of mushrooms in the cooking of that time was not found in Muslim, Jewish and northern peoples living on the territory of modern Russia.
 
In pre-revolutionary Russia, “silent hunting” was a common pastime among the nobility and even in royal families. For such events, ladies had special outfits, they went into the forest and organized competitions to see who would find more mushrooms. Mainly, they collected porcini mushrooms or white milk mushrooms, at that time they were especially revered and considered safe, but over time new types appeared in cooking - butter mushrooms, chanterelles, honey mushrooms, volnushki, saffron milk caps, black russula and many others.
 
After the revolution, mushrooms became the main substitute for meat, this was facilitated by difficult times associated with the food crisis and famine. In the early USSR, an entire infrastructure was created for the processing and preservation of mushrooms in order to provide the population with affordable and inexpensive food.
 
Today in Russia, "silent hunting" remains a traditional form of recreation in many families, and even festivals are organized dedicated to this tradition.
 
Mushrooms have firmly established themselves in Russian cuisine, there are thousands of recipes for appetizers, soups, porridges, hot dishes, pies and so on. And pickling and preserving mushrooms has become a real culinary art.
