On the eve of Lent, which this year will last from March 3 to April 19, we have prepared for you a set menu of lean recipes that will be not only delicious, but also satisfying. During Fasting, it is important to avoid protein deficiency, as it is the main building material for the body. Therefore, it is necessary to include dishes from legumes in the lean menu, and beans play a leading role in terms of protein content.
Snack. Bean paste
We prepare a light, lean and vegetarian paste made from boiled or canned beans, with fried onions, garlic and herbs.
Ingredients
Canned red beans – 2 tins of 425 g each.
Onion – 1 pc.
Garlic – 3 cloves
Olive/vegetable oil – 3 tbsp
Canned jalapeno pepper – 1 tbsp
Lemon juice – 1-2 tbsp
Parsley/ coriander – (to taste)
Spice recommendations:
Curry seasoning (not spicy) – 1 tsp
Italian herb mixture – 1 tsp
Ground black pepper – to taste
Fry the onion, garlic and jalapeno pepper over medium heat in olive oil or vegetable oil (for 10 minutes). Add ground pepper and spices to taste (in our recipe: a mixture of Italian herbs and curry) and stir-fry for another 1 minute.
Do not completely drain the marinade from the red canned beans, leave about 2-3 tablespoons. Add the fried mixture and mash with a blender until smooth. At the end, add a spoonful of lemon juice and mix everything together. Add fresh coriander or parsley.
Salad with canned peas and capsicum.
The salad is very satisfying and can even replace the main course and at the same time only about 85 kcal per 100 grams.
Mix the ingredients (2 servings):
Boiled potatoes – 3 medium pieces.
Canned peas – 200- 250 gr.
Pickled capsicum – 200 gr.
Vegetable oil – 2 tbsp .spoons
Dijon mustard – 1 teaspoon
Green onion – finely chop and sprinkle over the finished salad.
You can add: boiled carrots and ground black pepper.
Lean cabbage rolls with beans and mushrooms.
Ingredients:
Savoy cabbage, but you can also use white cabbage – 1-2 medium-sized pieces.
Potatoes – 1 kg of potatoes.
Onion – 2 pcs. medium
Canned beans – a can of about 400 grams
Canned honey mushrooms - 300 grams.
Tomato paste – 2 tablespoons
Vegetable oil to taste
Ground black pepper to taste
Cooking method.
• Separate the large cabbages, cut off the seals at the base and steam/blanch (5-7 minutes).
• Filling No. 1. Drain the juice from the canned beans. Fry half of the finely chopped onion in a frying pan, add the beans and pepper to taste. Next, wipe with a blender.
• Filling No. 2. Drain the marinade from the mushrooms and fry in vegetable oil along with finely chopped onion (1/2 piece).
• We prepare potato dumplings. Grate potatoes and 1 piece of onion on a grater.Put the draniki in a frying pan with a tablespoon and fry on both sides.
• We form cabbage rolls. We spread the draniki on the cabbage leaves and spread the ready-made fillings. And then twist it into a "bag" or "triangle" shape.
• Put the cabbage rolls in a baking container and cover with water, about 1.5 cm on top.
Bake in the oven for 40 minutes at 180 degrees. Next, add the tomato paste and bake for 10-15 minutes at a temperature of 160 degrees.
• For cooking, you can pour tomato sauce made on the basis of tomatoes in their own juice. Tomatoes are grated and stewed with the addition of herbs and ground pepper.
